Dr. Charlotte Atsango Serrem
Head of the Department of Family and Consumer Sciences

Dr. Charlotte Atsango Serrem is a Senior Lecturer in the School of Agriculture and Biotechnology at the University of Eldoret and currently serves as the Head of the Department of Family and Consumer Sciences. She holds a PhD in Food Science/ Nutrition from the University of Pretoria, South Africa, an MSc in Food Science/Human Nutrition from the Universities of Strathclyde and Glasgow, United Kingdom, and a Bachelor of Education from the University of Nairobi.

Dr. Serrem has extensive  teaching and research experience at university level in Food Science, Nutrition, and Microbiology, having served at Moi University, the University of Eldoret, and University of Eastern Africa. She has made significant contributions to the development, review, and implementation of undergraduate and postgraduate curricula in Food Science, Human Nutrition, and Food Security. She has supervised and examined numerous Master’s and Doctoral theses in Kenya, Uganda, and Japan, and has guided more than 150 undergraduate honours research projects.

Her research interests include cereal science, sensory evaluation, dietary assessment, food fortification, food safety, and food product development, with a focus on improving the nutritional quality of staple foods to address malnutrition and food insecurity. Her research has attracted funding from AICAD, VLIR, GL-CRSP, UNICARSSA, and institutional grants, and has resulted in peer-reviewed publications.
